Basic Italian Vinaigrette

1/4 cup Balsamic Vinegar
2 Tbsp Grey Poupon (or other mustard)
1 tsp. Italian Seasoning (or just oregano and basil, or whatever)
2 tsp. Lemon Juice
2 Cloves garlic minced, smashed and smeared with the edge of a knife into 1/2 tsp salt to make a paste.
2 Tbsp coarsely ground Parmesan and/or Romano Cheese
1/2 cup Extra Virgin Olive Oil
2 Tbsp Real Mayonnaise (optional)

Whisk together the first 6 ingredients then add the olive oil in a drizzle as you continue to whisk … or put it all in a jar and shake vigorously. Add Mayo to make slightly creamy (optional)
